Noor Murad Bio:
Noor Murad is a Bahraini-British chef born and raised in the Middle East to a Bahraini dad and English mum, meaning she loves tahini and Victoria sponge in equal measure. She has 16 years industry experience and has worked in Bahrain, New York, Hawaii and Germany before eventually relocating to London in 2016 to join the Ottolenghi family. Noor is the head of the Ottolenghi Test Kitchen and co-author of “Ottolenghi Test Kitchen: Shelf Love” as well as the second Ottolenghi Test Kitchen book, coming out this September. She has also developed recipes for Ottolenghi Flavour, Falastin, Ottolenghi’s Masterclass series as well as various other Ottolenghi online publications. Her Bahraini roots play a strong part in her cooking with Arabic, Persian and Indian flavours making a prominent appearance in her recipes.
Jake Norman Bio:
Jake is a London born chef. His career in cooking began in street kitchens in Mexico, and has since strived to immerse himself in exciting, colourful, and spicy food.
Before joining the Ottolenghi Test Kitchen in January 2022, Jake was the sous chef of the vegetarian Middle Eastern restaurant Bubala. He worked at the Michelin starred Spanish restaurant Sabor and perfected his grilling skills and Berber & Q. Jake really cut his teeth working in London's culinary institution St John, learning true seasonality and farm-to-table cooking. Simplicity and produce led cooking were championed and proudly influenced the way he is in kitchens, however his happy food, and the point where most recipes start, will always be Mexican.
